Crab Cakes
This is the recipe used by my Grandmother and then by your Grandmother!
Ingredients
ΒΌ cu. margarine
1 medium onion, chopped
2 T parsley flakes
2 T Worcestershire Sauce
4 T flour
1 egg, beaten
1 lb. crab meat
Bread Crumbs (either plain or Italian)
Directions
Melt margarine. Add onion and parsley. Cook until onion is clear. Add flour. Make cream sauce by adding milk (approximately one cup, but it may need a bit more). Add beaten egg and stir very quickly so that egg blends in and does not scramble! Add crab meat and Worcestershire Sauce.
Now put mixture in the refrigerator until thoroughly chilled (about 5-6 hours). Dip approximately 1 large tablespoon of crab mixture in bread crumbs. Crab cakes can be fried in hot oil (about 350 degrees) until golden brown, or then can be baked at 400 degrees for about 15 minutes until brown. If baking crab cakes, be sure to generously oil pan you are using. They can be turned over half way through baking time if you wish.
