Fish Fillets with Spinach

Ingredients

2 T margarine
2 T flour
1 t. instant chicken bouillon
Dash ground nutmeg
Dash ground red pepper
Dash white pepper
1 cu. milk
⅔ cu. shredded Swiss or Cheddar cheese
1 pkg. frozen chopped spinach, thawed and well drained
1 T lemon juice
1 lb. fish fillets, cut into serving pieces
½ t. salt
2 T grated Parmesan Cheese
Paprika

Directions

In double-boiler, heat margarine until melted. Stir in flour, bouillon, nutmeg, red pepper and white pepper. Cook, stirring constantly, until mixture is smooth and bubbly. Stir in milk. Heat to boiling, stirring constantly. Boil and stir for one minute. Add Swiss or Cheddar cheese. Stir until cheese is melted.

Place spinach in ungreased oblong baking pan. Sprinkle with lemon juice. Arrange fish over spinach and sprinkle with salt. Spread sauce over fish and spinach. Bake, uncovered, in 350F oven until fish flakes easily with a fork, 35 to45 minutes uncovered. Sprinkle with Parmesan Cheese and Paprika before serving. 4 Servings.
