Fish with Zucchini
Serves 3
Ingredients
2 sm. zucchini
1 can diced tomatoes
1 lb. red snapper, cod or bass fillets
¼ cu. margarine
2 T oil
¾ t. basil
½ t. salt
⅛ t. pepper
1 t. dillweed
2 T breadcrumbs
2 t. lemon juice
Directions
Preheat oven to 400F. Cut zucchini into 1/4" slices.
Add oil to the butter in the pan. Add zucchini and cook and stir about 3 minutes. Stir in basil, salt, pepper and dillweed. Cook 30 seconds. Stir in tomatoes. Heat to boiling. Reduce heat and cook uncovered until sauce is slightly thickened, about 5 minutes.
Put fish into greased shallow baking dish. Spoon zucchini-tomato mixture over the fish. Sprinkle with breadcrumbs and drizzle with lemon juice. Dot with butter or margarine. Bake, uncovered, until fish is done, about 25 minutes. Makes 3 servings.
