Seafood Crepes
For Crepes: Follow recipe for basic crepes, herbed crepes or parmesan crepes found in Bread Section.
Ingredients
For Filling:
½ lb. mushrooms, sliced thin
3 T chopped green onion
3 T margarine
1 lb. crab meat, or any kind of cooked fish you wish to use
1 lg. (8 oz) pkg. cream cheese
⅓ cu. half and half
2 T Sherry
1 cu. shredded Swiss cheese
¼ cu. chopped green onion (for garnish)
Directions
Cook and stir mushrooms and onion in margarine until onion is tender. Stir in seafood, cream cheese, and half and half. Cook, stirring constantly, until cream cheese is melted. Stir in Sherry.
Place about ¼ cu. filling on center of each crepe. Roll up. Put crepes, seam side down, in ungreased baking pan. Sprinkle crepes with Swiss cheese. Cover tightly with aluminum foil (to prevent drying) and bake in 350F oven about 20 minutes. Garnish with green onion. Makes 16 crepes, 8 servings.
