Barbecued Pork Roast with Dressing
Dressing of a "from scratch" variety.
Ingredients
2-3 lb. boneless pork roast or 3-4 lb. pork loin roast
Dressing:
4 cu. bread, cut into cubes
2 sm. onions, chopped
2 cloves minced garlic
2 eggs
1 stalk celery, chopped
1 T parsley flakes
½ lb. sliced mushrooms
½ cu. Romano or Parmesan cheese
Salt
½ t. pepper
¼ t. oregano
Directions
Mix together all above ingredients.
Roast pork in oven at 325 degrees for about 1-½ hours. Add dressing to roasting pan, pour on about 1 cu. barbecue sauce and roast (covered) for about one more hour.
