Beef Eye Roast with Mushrooms
Ingredients
1 onion, chopped
3 to 4 lb. Eye Roast
Salt
Pepper
1 lb. Mushrooms, sliced thin
Directions
Preheat oven to 325F. Put onion on bottom of roasting pan under where the roast will be. Put beef on top of onion. Sprinkle with salt and pepper. Roast until done, about 2 hours for medium-well.
Allow roast to sit for about 5-10 minutes for easier slicing. Slice thin. Use pan juices for gravy. Thicken using cornstarch (about 2 T dissolved in water). Add about 1 T Soy Sauce for additional flavor.
Melt about ¼ cu. margarine in saucepan. Saute about ½ cup of chopped onion until soft. Add mushrooms and stir. Add garlic salt, pepper and 1 t. dried oregano or basil.
NOTE: Check roast after about 45 minutes. If it appears to be too dry, add water to the bottom of the roasting pan.
