Popovers
Dough can be pre-made.
Ingredients
3 eggs
1 cu. milk
3 T butter or margarine, melted
1 cu. flour
½ t. salt
Directions
Preheat oven to 375 degrees. Grease well cupcake pan. (Pam can be used for the cupcake pan.) Set cupcake pan on large cookie or jelly roll sheet.
In bowl, with mixer at low speed, beat eggs until frothy. Beat in milk and butter until blended. Gradually beat in flour and salt.
Fill each cup about one-half full. Bake at 375 degrees for 15 minutes, then at 350 degrees for 25 minutes. Quickly make a slit in the top of each Popover and return to the oven for 5 minutes. Immediately remove Popovers from cups, loosening with a spatula if necessary. Serve piping hot. Makes 8 to 12 popovers.
Popover dough can also be made ahead of time and refrigerated until ready to use later in the day.
