Cheese Crepes with Veal in Sour Cream
For Crepes: Follow directions for Parmesan Crepes in Bread Section!
This recipe can also be made using chicken breast cut into cubes.
Ingredients
For Filling:
2 T butter
1 onion, chopped
½ lb. mushrooms, sliced thin
1-½ lb. boneless stewing veal cut into ½" cubes
¾ cu. chicken broth
1 cu. sour cream
1 t. soy sauce
½ t. dry mustard
Salt
Pepper
1 pkg. frozen Broccoli pieces (cooked)
Directions
Melt butter in skillet. Add onion and saute. Add mushrooms, cook for a minute or two, stirring often, then add veal or chicken. When meat is no longer pink, about 5 minutes, add ½ cu. chicken broth, reduce heat and cook, covered, over low heat for about 1 hour (only about 25-30 minutes if using chicken breast). Add up to ¼ cu. more broth if necessary.
In small bowl, combine sour cream, soy sauce and mustard. Add to pan with the meat, mixing well over low heat. Add salt and pepper to taste.
Put 4 teaspoons of filling into center of each crepe. Add some broccoli. Roll crepes and turn seam side down in greased baking dish. Cover with foil and bake 20 minutes. Serve at once. Makes 18 crepes.
