Monterey Chicken

Chicken Meat

Ingredients

4-6 chicken breast halves, pounded until about 1/4" thick
Garlic Salt and Pepper
Flour (about 1 cup)
½ cu. oil
½ cu. margarine
2 med. onions, sliced
1 green, red or yellow pepper, sliced
½ to 1 lb. fresh mushrooms sliced
½ cu. margarine
Garlic Salt and Pepper
½ t. Oregano
Mozzarella or Monterey Jack Cheese slices

Directions

Mix flour with garlic salt and pepper. Put in plastic bag. Drop chicken breasts, one at a time, into the bag to coat.

In large skillet, heat oil and margarine. Cook chicken pieces until done, about 3 minutes on each side. Remove from the skillet and put into a baking pan.

In large saucepan, melt margarine. Saute onions and peppers until tender-crisp. Add mushrooms and saute until done. Add garlic salt, pepper and oregano.

Preheat oven to 325F. Cover chicken pieces with cheese slices. Cover chicken and cheese with onions, peppers, mushrooms and butter sauce. Bake for about 20 minutes, until cheese is melted.

Serve with Linguine or Buttered Egg Noodles.
