Not Your Mama’s London Broil

Ingredients

1-½ - 2 lb. top round steak – which is cut thick – often called Family Steak – sometimes marked London Broil

Marinade the meat for 24 hours before hand – either bottled marinade or your own recipe. You can also use Italian Dressing for marinade. My marinade recipe is as follows:

½ cu. red wine vinegar
¼ cu vegetable oil
4 T soy sauce
4 T brown sugar
1 T chopped garlic
Black Pepper

Directions

Mix together all ingredients and pour over steak

Put steak on broiler pan. Season with salt and pepper. Place under broiler for 15 minutes – turning once halfway through. Remove meat from the boiler and let rest for 5 minutes – tented with a piece of aluminum foil. Meat will be rare – so adjust your broiling time according to your taste.

Bistro Gravy

In a medium size skillet add 1 T olive oil and 1 T butter. Add ½ cu. chopped onions and cook until tender. About 1-2 minutes. Stir in 2 T tomato paste and 2 T smoked paprika. Cook for 1 minute. Add 1 T flour and cook for another minute. Then whisk in 1 cu beef stock and season with salt and black pepper. Cook until thickened – about 2-3 minutes. Turn off heat and stir in 2 T capers and 2 T dried parsley.

Slice steak thin and top with Bistro Gravy.

Cooked fresh mushrooms can also be added to the gravy.
