Swiss Steak
Ingredients
3 T flour
1 t. dry mustard
½ t. salt
1-½ lb. beef round steak
2 T oil
1 can diced tomatoes
2 cloves garlic (chopped fine)
1 cu. water
1 lg. onion (sliced)
1 lg. green pepper (sliced)
Directions
Mix flour, mustard and salt.
Sprinkle one side of round steak with flour mixture. Pound in. Turn on other side and sprinkle with flour mixture. Pound in. Cut beef into 6 pieces. Heat oil in skillet. Cook beef over medium heat until brown on both sides (about 15 minutes). Add tomatoes (with liquid) and garlic. Heat to boiling and reduce heat. Cover and simmer until beef is tender (about 1 hour). Add water, onion and green pepper. Heat to boiling. Reduce heat and simmer vegetables for about 6 minutes.
