Veal a la Surf

This recipe comes from the Surf Restaurant in Anchor Bay. It works equally well using Chicken Breasts instead of Veal.

Directions

Lightly flour thin veal slices or pounded boneless chicken breast halves. Saute in mixture of 1/2 cu. butter and 1/2 cu. vegetable oil, approximately 3 minutes per side for chicken and 2 minutes per side for veal. Chicken should no longer be pink.

Arrange meat in baking pan. On top of meat, arrange thin slices of fresh tomatoes, chopped green onions and chopped capers. Sprinkle generously with Parmesan Cheese.

Preheat oven to 325 degrees. Bake for approximately l5 minutes or until heated through.
