Jewish Fresh Apple Cake
Have had this recipe for many years. The cake is heavy but oh so good. Shared with me by my cousin, Debbie Laarkamp.
Ingredients
1-¼ cu. oil
2 cu. sugar
4 eggs
2 t. cinnamon
2 t. vanilla
3 cu. flour
1 t. salt
½ t. baking soda
5 cu. chopped fresh apples
1 cu. nuts (optional)
Directions
Cream together oil, sugar and eggs. Beat well. Add gradually the flour, baking soda, salt, cinnamon and vanilla. Beat for about 2-3 minutes. Turn off the mixer and fold in the apples and nuts by hand. Bake in an UNGREASED tube pan at 325F for 1-½ hours.
