Banana Cream Pie
Uses standard, 9" pie crust, *and* standard pie meringue
Ingredients
2 pkgs. Cook and Serve (Not Instant) Vanilla or Banana Pudding
3-4 eggs, separated
3-4 fresh ripe bananas
Directions
Prepare vanilla pudding according to package directions, adding the egg yolks and stirring in very well. Cool the pudding, stirring once in a while so that a skin does not form.
Prepare Meringue, according to the recipe.
Prepare and a bake a 9" pie crust.
When pie crust is cooled a bit, fill the bottom of crust with slices or fresh banana.
When pudding is cooled a bit, stir slices of fresh banana into it. Add pudding mixture to bananas layered in pie shell.
Top with meringue and bake to brown meringue.
