Coconut Cream Pie
Uses standard, 9" pie crust, *and* standard pie meringue
Ingredients
2 pkgs. Cook and Serve (Not Instant) Vanilla Pudding
3-4 eggs, separated
1-½ cu. shredded coconut
Directions
Prepare vanilla pudding according to package directions. Add the egg yolks and stir very well. Cook and stir pudding until done.
Bake 9" pie shell.
When pudding is done, stir in 1-¼ cu. shredded coconut. Prepare meringue. Before baking meringue, sprinkle with ¼ cu. coconut.
