Seven Minute Icing
*Slighly* overcooking allows the crust to "crack". Massive overcooking will make it crust and flake. Perfect timing keeps it gooey.
Ingredients
2 egg whites
1-½ cu. sugar
¼ t. cream of tartar
⅛ t. salt
⅓ cu. water
1 t. vanilla
Directions
Using double-boiler, combine all ingredients, except vanilla. Cook and beat with an electric mixer until icing stands in stiff peaks. The cooking and beating time is approximately 7 minutes. Remove frosting from the heat, still beating, and add 1 t. vanilla. Mix in thoroughly. Recipe makes enough icing to frost two cake layers.
