Cheese Blintzes

Follow recipe for basic crepes found in the bread section. This filling recipe will make about 24 blintzes.

Gooey Bread Breakfast Cheezy

Ingredients

1 container small curd cottage cheese (24 oz.)
1 lg. pkg. cream cheese (8 oz.)
ΒΌ cu. sugar
2 eggs
1 t. vanilla extract

Directions

Beat all ingredients until smooth. Cover and refrigerate until ready to use.

Place about 3T filling in each crepe. Roll up.

Note: Blintzes can be made ahead of time, rolled and frozen. Just take out of the freezer and fry in melted oleo.

In a small amount of melted margarine, fry each blintze until golden brown. Top with sour cream and strawberry or peach jam.

Great for Sunday morning brunch!!
