Unstuffed Pepper Casserole
This is really good. It does taste exactly like stuffed peppers without the bother of cleaning and stuffing the peppers (which most people don't eat anyway). In this casserole you slice up two peppers and mix everything together and bake.
Ingredients
1 pound ground beef
1 green bell pepper, large diced
1 red bell pepper, large diced
1 large onion diced
2 teas. crushed garlic
2 cups cooked white rice
1 24-ounce jar marinara sauce
1 1/2 cups shredded Italian cheese blend
Directions
Preheat the oven to 350 degrees Fahrenheit.
Brown the meat in a skillet and set aside. Drain excess grease. Add the peppers,onions and garlic to the pan and brown.
Combine the meat, peppers and cooked rice in a bowl. Place this mixture in a casserole dish.
Add marinara sauce and a handful of the cheese and combine. Top with the rest of the cheese.
Bake for 25-35 minutes, until the cheese on top is bubbly and slightly browned.
