Salmon (Foil Wrapped) and baked
This was really good. I used a bit of basil in addition to the items called for in the butter sauce. I think dill would work wonderfully well. Also it calls for asparagus to be wrapped up with the salmon and baked together. It was good, but when I do it again, I think I will roast the vegetable (any you like) separately.
Ingredients
Salmon Fillets
Asparagus ( or other veggie) (about 1 lb.)
1/3 cu melted butter
1/3 cu lemon juice
1 T garlic
2 t parsley
salt/pepper
2/3 cu. parmesan (fresh grated worked really well)
Directions
Over at 400 degrees
Place individual fillets on foil (now you can add your vegetable here or not)
Mix butter, lemon, garlic, parsley
Pour over salmon
Sprinkle with salt and pepper
Sprinkle on Parmesan (as much or as little as you like)
Wrap tightly (I used double foil)
Bake approximately 15 to 20 minutes
