Creamy Bacon Carbonara with Chicken

Pasta Pasta 30-To-An-Hour

Ingredients

1/2 lb. Pasta (I like to use the Pasta that is shorter)
2 cu. cooked cut up chicken (Rotisserie)
1/2 cu. heavy cream
Parsley
1/2 cup grated Parmesan
2 t. olive oil
1/2 t. salt
2 large eggs
1/2 lb. bacon fried and crumbled
1 sm. onion chopped
1/2 cu. chopped mushrooms (optional)

Directions

Mix Eggs, Cream, Parmesan, Parsley, Salt and Olive Oil in a bowl and set aside. Fry bacon until crisp and then crumble. Using a bit of the bacon grease, fry onion until golden. Add the cooked chicken and stir. Cook and drain pasta and then add to the chicken, onion mixture. Pour the egg/cream sauce into the pasta and stir. Cook for about 2 minutes until fully incorporated. Fold in the bacon!
