Baked Eggplant Parmesan

If you are an eggplant fan you will love this. I was surprised how well it turned out. And, no frying!!!

Veggies Casserole Cheezy

Ingredients

Eggplant - peeled and sliced about 1/4" thick (you need about 12 slices)
Salt
3 beaten eggs
1 box Italian Seasoned Panko bread crumbs
Marinara Sauce - about 4 cups
Mozzarella Cheese Slices
1/2 cu. Parmesan Cheese
1/4 cu. fresh chopped basil or 1 t. dried basil
Cooking Spray

Directions

Sprinkle the eggplant slices with salt and allow to sit in the colander for about an hour. Then rinse and blot dry.
Preheat oven to 400 degrees. Spray baking sheet with cooking spray.
Dip eggplant slices in egg, then in bread crumbs. Place in single layer on the baking sheet and lightly spray tops of the eggplant with cooking spray. Bake in the oven approximately 10 minutes and then carefully flip over and bake 10 minutes more. Remove from the oven and lower the temperature to 350 degrees.
Using a 9x13 baking dish (sprayed with cooking spray) cover the bottom lightly with marinara sauce. Place a layer of slices in the sauce. Then add a light amount of sauce on each slice.
Add some parmesan and a slice of mozzarella. Now repeat the layer. Sprinkle basil and more Parmesan over the top.
Bake, uncovered, in 350 degree oven for 30 minutes.
