Slow Cooker Cheesy Bacon Ranch Potatoes
These are beyond good and they reheat very well.
Ingredients
4 medium sized potatoes or 6 to 8 small red or yellow potatoes
1 large onion, thinly sliced
1/2 pound of cooked and crumbled bacon - or more than 1/2 pound - your choice
2 1/2 cu. shredded cheddar cheese
1 pkg dried ranch dressing packet - or 2 T. of same if you are using the jar of dried dressing
2 T butter
1/2 cu. sliced green onions (optional but pretty!)
Directions
Cook the bacon and crumble.
No need to peel the potatoes. Just wash them and slice them.
Line your slow cooker with foil - I actually admit to not doing this. I just spray it really well with cooking spray instead
Layer in half the potatoes, half the bacon, half the onion and also green onion if you are using it. Sprinkle on 1/2 the Ranch Dressing dry mix. Top with about half the cheddar cheese.
Now repeat the layers. Add the butter across the top.
Cover the top of the potatoes with some aluminum foil (helps them to steam and cook properly). Cook on low for 4 to 6 hours.
At the end of cook time add some more cheddar on the top if you wish and/or chopped green onions.
