Stuffed Pepper Soup - Crock Pot
Really tastes like stuffed peppers. Not nearly as much prep.
Ingredients
Ground beef - 1 lb.
medium onion diced
2 stalks celery diced
1 or 2 carrots peeled and diced
1 each smallish green, red, yellow, orange pepper
2 t garlic crushed
1 can tomato sauce
1 can diced tomatoes
4 cups broth - I used tomato bullion
1 t oregano
1 t basil
1 T worstershire sauce
2 cups cooked rice.
Directions
Brown ground beef. Add beef to crock pot. Sauté onion, garlic, carrot, celery and the peppers in same skillet for about 5 minutes. Add vegetables to the crock pot. Add tomato sauce, oregano, basil, Worcester sauce, diced tomatoes and broth. Cover and cook on low 6 to 8 hours.
When done and cooled off a bit refrigerate for a day. It just makes it taste better. Before reheating the soup, add the cooked rice.
This recipe works beautifully on the stove top too.
