Cabbage Roll Soup

I recommend making this a day ahead. The flavor is just better.
I also usually make this in the crock pot. Browning the beef with onion and garlic first. Then adding all other ingredients to the crock pot. Cook low 6 to 8 hours.

Ingredients

2 t olive oil
1 lb ground beef
1 Onion finely diced
2 t minced garlic
4 cu coarsely chopped cabbage
2 carrots peeled and diced
4 cu broth - I use tomato bouillon
24 oz tomato sauce
1/2 cu uncooked rice
3 T brown sugar
1 bay leaf

Directions

Brown ground beef. Add the onion and garlic. Add cabbage, carrots, broth, tomato sauce, rice, bay leaf and brown sugar. Bring to a simmer and cook until rice and cabbage are tender.
