Seafood Chowder
Originally from Uncle Bob. So many cute little sea creatures have to die for this.
Ingredients
1 lb. potatoes - peeled and sliced thin
1 clove garlic, minced
1 t. parsley flakes
¼ t. pepper
½ t. salt
½ t. dill weed
2 T margarine
1 lb. Haddock or Cod fillets
½ lb. raw shrimp, Cleaned and deveined
½ lb. scallops
½ lb. crabmeat
1 lg. can clams, chopped or minced
4 carrots, sliced
1 sm. chopped onion
1 stalk celery, sliced
1 pkg. frozen broccoli cuts
1 lb. fresh mushrooms, sliced
1 pint Half and Half
Directions
In small amount of oil, in soup pot, saute onions, carrots, celery and garlic. Add about 2 qts. of water and bring to a boil. Add potatoes, parsley flakes, pepper, salt, dill weed, fish fillets (cut into small pieces), shrimp, scallops and crab meat. Bring to boil. Reduce heat and simmer for about l hour.
In skillet, in 2 T margarine, saute mushrooms and thawed broccoli for about 5 minutes. Add to soup. Bring soup back up almost to a boil and add Half and Half. Heat through.
If soup is not as thick as you might like, dissolve 3 T of cornstarch in about ¼ cu. water and add to soup. Cook and stir constantly until thickened.
