Classic Stuffed Peppeers

These are really delicious!

Ingredients

1/2 cu uncooked rice
2T olive oil
1 onion, chopped
1 T tomato paste
3 garlic cloves, minced
1 lb. ground beef
1 can diced tomatoes
1 t dried oregano
salt
black pepper
6 bell peppers, tops and cores removed
1 cu shredded Monterey Jack
chopped fresh parsley for garnish

Directions

Preheat oven to 400 degrees
Cook rice according to package directions
In skillet, add olive oil. Cook onion for about 5 minutes. Stir in tomato paste and garlic and cook about 1 minute more. Add ground beef and cook until no longer pink, about 6 minutes. Drain fat.
Then stir in cooked rice and diced tomatoes. Season with oregano, salt and pepper. Let simmer about 5 minutes.
Place peppers in 9x13 baking dish (sprayed with cooking spray). Spoon beef mixture into each pepper and top with the cheese. Cover dish with foil.
Bake until peppers are tender, about 35 minutes. Uncover and bake about 10 minutes more (until cheese is bubbly).
Garnish with parsley before serving (or not!)
