Poached Salmon

This is a fast and easy way to cook salmon, especially if you are using it in another dish. I use it to make Salmon Quesedillas.

Ingredients

1 to 1 1/2 lbs salmon fillets
Salt
1/2 cup white wine
1/2 cup water
Thinly sliced onion - about 1/2 onion
Sprinkle of dill
Black pepper

Directions

Sprinkle salmon fillets with salt. Put wine, water, onion slices, dill, and black pepper in a sauté pan or skillet. Bring to a simmer.
Place salmon fillets in the pan (skin side down). Cover and simmer 10 to 15 minutes.
Salmon will easily be broken up with a fork.
