Creamy Chicken and Gnocchi Soup. .(Olive Garden Copycat)

Delicious. Really tastes just like the restaurant version.

Chicken Soup 30-To-An-Hour NightBeforePrep

Ingredients

2 T butter
2 T olive oil
One chopped onion
2 chopped carrots
2 stalks celery chopped
1 t fresh chopped thyme or 1/4 t ground
1 T chopped garlic
1/4 cup flour
4 cups chicken broth
2 cups cooked, diced chicken
1 lb Gnocchi
1/2 cup cream (or milk or half and half)
1 cup coarsely chopped spinach
1/4 cu Parmesan Cheese
Salt and pepper to taste

Directions

Melt butter and oil in soup pot. Add onions, carrots and celery and cook until just tender. About 7-10 minutes
Add garlic, thyme and flour and cook about 1 minute.
Add broth, chicken and gnocchi. Bring to a boil and then simmer until gnocchi floats. About 5 minutes.
Turnoff heat. Stir in cream, spinach,and cheese. Add salt and pepper if desired. I found that more salt was not needed.
This works really well if cooked early in the day and then refrigerated. The flavors get a chance to blend.
Also freezes really well.
