Skillet German Potato Salad

I really liked this.

Veggies Salad

Ingredients

1 1/2 lbs small red potatoes
4 slices bacon - cooked and crumbled
1/4 cu apple cider vinegar
1 1/2 T sugar
2 T water
3 T olive oil
1 t Dijon Mustard
1 medium chopped onion
1 t dried parsley
Salt and pepper to taste

Directions

Wash and cut potatoes. Boil potatoes until just done. About 8-10 minutes. Drain. Set aside
Cook and crumble the bacon slices. Set aside.
Whisk together vinegar, sugar, water, olive oil and dijon mustard.
Using olive oil - about 2 T. Heat olive oil in a skillet. Add chopped onion and cook for a few minutes. Add the potatoes and cook about 5 minutes until they start to brown. Now add the vinegar mixture about 1/3 at a time. Cook for about 1 minute after each addition.
Stir in bacon and parsley. And serve.
