Cheesy zucchini gratin

Veggies Casserole Cheezy

Ingredients

1 lg zucchini - sliced down the middle and then cut into half moons.
4 T butter
Small onion thinly sliced
3 t minced garlic
1/4 cup vegetable broth
1/2 cupParmesan cheese
1 cup shredded cheese - your choice
1/2 t salt
1/2 t pepper
1/2 cup heavy cream

Directions

Melt butter. Add onions and cook until just soft. Add garlic and cook for another minute
Add in broth, salt, pepper and heavy cream. Allow to begin to bubble. Add Parmesan cheese.
Add in zucchini and cook 5 minutes until zucchini softens.

Spray baking dish. Add the zucchini mixture. Top with the shredded cheese

Bake in 425 oven for about 15 minutes.
