Creamy Tomato Basil Soup
Very good tomato soup.
Ingredients
1 T Olive Oil
1 lg. onion - chopped
1 T Dried Basil
2x 28 ounce cans crushed tomatoes
1 t. baking soda
2 cu. chicken broth
1x 12 ounce can evaporated milk (whole or 2%)
Salt and Pepper to taste
Directions
Heat oil. Add onion. Saute until tender - 5 to 7 minutes. Stir in Basil, cook until fragrant (less than 1 minute). Add tomatoes and baking soda. Then add chicken broth. Bring to a simmer. Reduce heat, partially cover, and simmer to blend flavors - about 10 minute.
Pour soup in batches into blender and puree. Return soup to pot and stir in milk. Season with salt and pepper.
Soup is better if refrigerated overnight.
