Cream of Mushroom Soup #2
Also totally not campbells.
Ingredients
1 lb. fresh sliced mushrooms
5 T margarine
2 T flour
1-½ cu. beef broth or chicken broth
½ cu. chopped onion
2 sm. bay leaves
½ t. basil
¼ t. salt
⅛ t. pepper
3 cu. milk or light cream
Directions
Melt 4 T margarine in large sauce pan. Add onions and saute until soft. Add mushrooms and saute. Remove mushrooms and onions and set aside.
In same sauce pan, melt 1 T margarine. Stir in flour. Gradually add broth. Add bay leaves, basil, salt and pepper. Cook and stir until thickened. Add milk. Cook over low heat 8 minutes longer, stirring occasionally. Do not boil. Remove bay leaves. Return mushrooms and onions to pan. Heat through. Makes 6 servings
