Cream of Cauliflower / Broccoli Soup

The one with the blender wand.

Veggies Soup

Ingredients

1 medium head fresh cauliflower
1 medium bunch fresh broccoli
or
1 pkg. frozen cauliflower
1 pkg. frozen broccoli

1 med. onion, chopped
2 T margarine
2 T flour
1 cu. water
1 T instant chicken bouillon
½ t. celery salt
¼ t. salt
⅛ t. pepper
1 cu. half and half

Directions

Cook cauliflower and/or broccoli and chopped onion in 3 cups of water. DO NOT DRAIN. Pour vegetable and water into blender and process on high speed until smooth.

Heat margarine in saucepan. Stir in flour. Cook, stirring constantly until mixture is smooth and bubbly. Stir in one cup of water. Heat to boiling, stirring constantly. Boil and stir for one minute more. Stir in the vegetable mixture, bouillon, celery salt, salt and pepper. Heat just to boiling. Stir in half and half. Heat through, but do not allow to boil. Makes 8 servings.
