Chicken Noodle Soup
The one with the Klutsky Noodles.
Ingredients
1 Whole Chicken
6 carrots, sliced
2 lg. stalks celery, sliced
2 md. onions, chopped
4 potatoes, quartered
3 pkgs. Mrs. Weiss' Klutsky Noodle Soup Mix
Directions
Place whole chicken in large soup pot and cover with water. Bring water to a boil. Reduce heat and simmer about one hour, until chicken is done. Remove chicken from pot. Reserve broth. Refrigerate broth overnight. Remove chicken meat from bones and refrigerate meat.
Skim the fat from the chicken broth. Add the carrots, celery, onions, and potatoes to the chicken broth. Return the chicken to the broth. Add enough water to cover vegetables and chicken and enough to make 2 quarts. Bring soup to boil. Reduce heat and simmer for about 1-½ hours.
About ½ hour before serving - Bring soup almost to a boil. Add the three pkgs. of soup mix, stirring well. Cook. stirring occasionally, for at least 20 minutes (until noodles are done).
Add salt and pepper to taste.
