Crepes
This is the basic crepe recipe used in all the Crepe variants.
Ingredients
1-½ cu. milk
2 T vegetable oil
3 eggs
1-½ cu. Flour
Dash Salt
Directions
In large bowl, beat eggs well on medium speed. Gradually add dry ingredients alternately with milk and oil. Beat until smooth. Batter may be prepared ahead of time. Keeps in refrigerator for up to 3 days.
Yield: 20-24 crepes
VARIATIONS:
Parmesan Crepes: Add ½ cu. grated Parmesan Cheese to Basic Crepe Recipe. Stir frequently while baking Crepes.
Dessert Crepes: Use 1-⅓ cu. milk instead of 1-½ cu. milk. Add 2 T. sugar to Basic Crepe Recipe.
Herb Crepes: Add 1 t. oregano, or thyme, or basil, or parsley to Basic Crepe Recipe.
