Cheese and Rice Casserole
I served this with fried chicken. Makes 8 servings.
Ingredients
2 cu. water
1 cu. uncooked regular rice
1 t. salt
½ t. dry mustard
1 drop hot sauce
¼ t. pepper
1 med. onion, chopped
2 cu. shredded Mozzarella or Cheddar cheese
4 eggs, slightly beaten
2½ cu. milk
½ cu. grated Parmesan cheese
Directions
Heat water, rice, salt, mustard, hot sauce and pepper to boiling. Reduce heat. Cover and simmer for 14 minutes. Do not lift cover or stir. Remove from heat. Fluff rice lightly with fork. Cover and let steam for 5-10 minutes.
Spray oblong baking dish with non-stick cooking spray. Layer half the rice, onion, green pepper and mozzarella cheese in dish. Repeat the layers with remaining rice, etc. Mix eggs and milk and pour over rice mixture. Sprinkle with Parmesan cheese. (Casserole can be covered and refrigerated at this point for baking later in the day.)
Bake, uncovered, at 325F until set, about 45-50 minutes. Let stand 10 minutes and cut into squares.
