Cheese Souffle
If you like scrambled eggs, you'll like this.
Ingredients
½ lb. grated cheddar cheese
6 T margarine
6 T flour
¾ t. dry mustard
½ t. salt
⅛ t. pepper
⅛ t. paprika
1-½ cu. milk
6 egg yolks
6 egg whites
Directions
Preheat oven to 300F. Use 2 qt. ungreased casserole.
Using double-boiler, melt butter. Blend in flour, dry mustard, salt, pepper and paprika. Heat until mixture bubbles. Stir in milk. Bring mixture to a boil, stirring constantly. Cook l to 2 minutes after it comes to a boil. Add cheese, all at once. Stir until cheese is melted. Remove from heat.
Beat egg yolks until thick and lemon-colored (about 3-4 minutes).
Using electric mixer, slowly add egg yolks to cheese mixture.
Beat egg whites until thick and stiff peaks form. Again, using electric mixer on lowest speed, slowly add whites to cheese and egg mixture.
Bake for 1 to 1 1/4 hours or until knife inserted in center comes out clean. Serve immediately - quick! - before it falls!!!
