Crab Stuffed Mushrooms

Mushrooms full of other stuff.

Veggies Casserole

Ingredients

12 lg. fresh mushrooms
¼ cu. oil
½ lb. crabmeat
1 egg, lightly beaten
2 T mayonnaise
2 T chopped onion
1 t. lemon juice
½ cu. bread crumbs
2 T margarine, melted

Directions

Rinse and pat dry mushrooms. Remove stems. Chop up removed stems for use in stuffing. Brush mushroom caps with oil. Place in buttered baking dish.

Combine crabmeat, egg, mayonnaise, onion, lemon juice, ¼ cu. bread crumbs and chopped up mushroom stems. Fill mushroom caps with mixture.

Combine ¼ cu. bread crumbs with melted butter. Sprinkle over crab mixture. Bake in oven at 375F for 15 minutes.
