Hash Brown Potato Casserole
Recipe can be halved.
This becomes a main dish if you add some ham and/or bacon. Just add a salad or ?????
Ingredients
2 lbs. frozen hash brown potatoes
4 cups grated Cheddar cheese
1 can cream of mushroom soup or for that matter cream of anything soup
2 cups sour cream
½ cup melted butter or margarine
1 medium onion, chopped
2 teas. Garlic salt
Directions
Preheat oven to 350 degrees. In bowl, combine potatoes, 2 cups of cheddar, the soup, sour cream, butter, onion and garlic salt. Place in buttered 13x9x2-inch pan and bake for 35 minutes. Remove from oven and top with the remaining cheddar. Return to the oven and bake for 10 minutes longer.
Note: I halved this recipe and had enough for 6 people. I cut all of the ingredients in half with the exception of the soup which I added as listed.
