Spinach Quiche

Used with regular pastry crust. Recipe found in Dessert section.

Ingredients

10 oz. frozen chopped spinach, thawed and drained well
2 T butter
½ cu. onion, chopped
1 cu. fresh mushrooms, sliced
Garlic Salt
Pepper
4 lg. eggs, blended with enough milk to make 2 cups.
Grated Swiss, Mozzarella, Monterey Jack, and/or Cheddar Cheese

Directions

Melt 2 T butter in skillet. Gently sauté onions until soft. Add mushrooms and cook a little longer. Add spinach, Garlic Salt and pepper. Remove from heat.

Preheat oven to 375F. Strew shredded cheese in the bottom of an unbaked pie shell. Add vegetable mixture on top of the cheese. Pour eggs and milk over vegetable mixture. Bake for about 45 minutes or until quiche top has puffed and looks to be set.

Let quiche sit for about 10 minutes to make it easier to cut and serve. Makes a 9" quiche.

Note: Broccoli can be substituted for spinach if you like. Also bacon can be added or even crab!!!
