Mushroom and Bacon Skillet
Serves 4 to 6
Ingredients
¼ lb. bacon
½ cu. chopped onion
½ lb. sliced fresh mushrooms
2 cu. water
1 T chicken bouillon
½ t. salt
½ lb. Orzo, uncooked
2 t. parsley flakes
Directions
Sauté bacon. Drain and crumble bacon into bits (For you weight-watchers out there, substitute 3 T of bacon bits for the fried bacon!).
Sauté onion and mushrooms in about ¼ cu. margarine. Add water, bouillon, salt and uncooked Orzo. Bring to a boil. Reduce heat to low. Cover tightly and simmer for 12 minutes or until Orzo is tender. Stir in bacon and parsley. Serves 4 to 6.
