Spinach Cabrini
Of a casserole variety.
Ingredients
½ lb. Spaghetti, cooked and drained
½ cu. margarine
2 pkgs. frozen chopped spinach, thawed and drained
4 cu. shredded Monterey Jack cheese
¼ lb. mushrooms, sliced
2 cu. sour cream or yogurt
¼ cu. onion, diced
dash oregano
¼ t. salt
¼ t. black pepper
In margarine, sauté onion and mushroom slices until onion is tender.
Directions
In large bowl, stir together all ingredients. Spray 9xl3" baking dish with non-stick cooking spray. Bake casserole, covered, at 350F for 45 minutes.
