Stuffed Pasta Shells
With meat or meatless filling.
Ingredients
One package large pasta shells for stuffing, cooked according to package directions and drained
Meat Filling:
1 lb. lean ground meat
2 cu. cottage or rigotta cheese
½ cu. grated Romano or Parmesan cheese
3 eggs
1 pkg. frozen chopped spinach, thawed and drained well
1-½ t. salt
¼ t. pepper
1 t. oregano
½ t. garlic powder
1 cu. shredded Mozzarella cheese
Cheese Filling:
2 cu. cottage or rigotta cheese
1 pkg. frozen chopped spinach, thawed and drained well
2 eggs
½ cu. Romano or Parmesan cheese, grated
1 t. salt
¼ t. pepper
1 t. oregano
½ t. garlic powder
2 cu. shredded Mozzarella cheese
Directions
Mix all ingredients well and stuff into cooked shells.
Shells should be covered tightly with aluminum foil and baked in 325F oven for about 45 minutes.
